Maple Season is Under Way

It February and that means preparations are under way for maple season! We have started tapping and the sap is starting to flow. We have had a busy winter installing some new equipment and we are very excited to get the season started. It can be a tricky time of year because the temperatures can fluctuate so much. As I write this it is 8pm and its 49 degrees outside, not typical for this time of year. But in 24 hours it will be well below zero and wont get above freezing for two days. If your wondering what makes the sap run there is some great science behind it, but in short the best sugaring weather is 40 degrees during the day and 20 degrees at night.
